The Mill
This large-scale olive oil mill stopped production in 1956, the year all the olive trees froze in Provence. All the oil production machinery, including two mill-stones, two oil-presses, the water wheel, the capstan as well as the cauldron, has nonetheless been kept in good working order. The Mill was bought and saved from ruin by the Walter Family and has been undergoing renovation for the past 10 years. It was recently fitted with a new wooden water-wheel of 4.5 meters in diameter which can be seen underground and is fed by water conduits that were reconditioned in 2006.
